Agave Bar and Grill Expands to Downtown Fishers
Local, women restaurateurs to bring authentic Mexican food to Spark Apartments
FISHERS, IN – Agave Bar and Grill announced plans to expand its business with a second authentic Mexican restaurant to be located in downtown Fishers. Locally owned and operated, the expansion is planned for the Spark Apartments mixed-use building, developed and constructed by Envoy, Inc., and improvements are currently underway.
“It was always our expectation that the development of the Nickel Plate District would create increased opportunity for locally-owned businesses and restaurateurs,” said Fishers Mayor Scott Fadness. “The planned addition of Agave Bar and Grill to North Street brings yet another destination for residents and visitors in our thriving city center.”
A Hamilton County favorite, Agave Bar and Grill is owned by sisters, Cynthia Zimla and Evelyn Veloz, and remains a popular destination on Carmel’s Main Street. The expansion marks the second location for the family-operated restaurant serving authentic Mexican food from recipes passed down through generations. The Fishers location will offer the full menu, as well as a tequila bar and spacious patio.
In celebration of the Fishers expansion, Agave Bar and Grill is partnering with Patrón Tequila on a tailor-made, craft tequila and exclusive cocktails for the Nickel Plate District location.
“The people of Hamilton County have welcomed our restaurant from the beginning,” said Zimla, co-owner of Agave Bar and Grill. “As soon as we saw the corner location at the Spark Apartments in Fishers, we knew it was the perfect spot for our growing business.”
Agave Bar and Grill will be located on the first floor of Spark Apartments on the northeast corner of North and Maple streets. The restaurant will occupy approximately 1,800 square feet of space and includes an elevated patio facing North Street.

With improvements currently underway, Agave Bar and Grill is targeting a March 2020 opening.
